Crunchy Miso Peanut Cucumber Salad

Ingredients:

  • 1 large cucumber
  •  Salt to taste
  •  Pepper to taste
  • 1/4 cup of Spicy Pineapple Peanut Sauce
  • 4 Chives or green onion thinly sliced
  • 1/2 cup crushes peanuts
  • 1 tablespoon of sesame seeds
  • 1 tablespoon sesame oil
  • 1 tablespoon of Miso Heat miso paste (you can use any miso paste or omit it if you don't have any)

Instructions:

  1. Prepare the Cucumber:

    • Slice cucumber in thin disks, you can also use a mandolin if you have one on hand (Just don't slice your fingers).
  2. Make the Dressing:

    • Open Spicy Pineapple Peanut Sauce (if consistency is too thick add a little warm water to the bottle and shake before pouring)
  3. Assemble the Salad:

    • Put cucumbers, crushed peanuts, sesame seeds, green onion or chives, salt and pepper, MisoHeat, Spicy Pineapple Peanut Sauce into a bowl and mix!
  4.  Chill and Serve:

    • For the best flavor, let the salad chill in the refrigerator for at least 15 minutes before serving. This allows the flavors to meld together. You can eat it immediately too, its up to your discretion.
  5. Enjoy:

    • Eat up!
    • NOTE: Be creative, you can add or take out any of these ingredients, its your salad, enjoy it the way you'd like!
