Green Curry Chimichurri Chicken Thighs
Ingredients:
- 2 lbs boneless skinless chicken thighs (or breasts)
- ½ cup Green Curry Chimichurri
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
Instructions:
- Season chicken with salt, pepper and garlic powder generously.
- In a bowl, toss chicken in the Green Curry Chimichurri,
- Coat the chicken in the marinade and let it sit for at least 30 minutes (or overnight for max flavor).
- Grill over medium-high heat for 5-7 minutes per side, or until cooked through.
- Let rest for a few minutes, then drizzle with more Green Curry Chimichurri before serving.
- Serve with jasmine rice and grilled veggies.
