Green Curry Chimichurri Chicken Thighs

Ingredients:

  • 2 lbs boneless skinless chicken thighs (or breasts)
  • ½ cup Green Curry Chimichurri
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder

Instructions:

  1. Season chicken with salt, pepper and garlic powder generously.
  2. In a bowl, toss chicken in the Green Curry Chimichurri
  3. Coat the chicken in the marinade and let it sit for at least 30 minutes (or overnight for max flavor).
  4. Grill over medium-high heat for 5-7 minutes per side, or until cooked through.
  5. Let rest for a few minutes, then drizzle with more Green Curry Chimichurri before serving.
  6. Serve with jasmine rice and grilled veggies.
