Mango Chicken Chopped Salad with Spicy Pineapple Peanut Dressing
Serves: 2–4
Vibe: Tropical, crunchy, spicy-sweet, and protein-packed
Salad Ingredients:

2 cups chopped romaine or green leaf lettuce

1 cup cooked chicken breast, chopped or shredded (grilled or rotisserie works great)

1 ripe mango, diced
-
½ red bell pepper, diced
-
½ small red onion, finely chopped
-
½ cup jicama, finely diced
-
¼ cup shredded carrots
-
¼ cup toasted cashews, chopped
-
1 tablespoon sesame seeds
Dressing:
-
3 tablespoons Chin Dribblin’ Spicy Pineapple Peanut Sauce

2 tablespoons orange juice
-
1 tablespoon rice wine vinegar
-
1 tablespoon fresh lime juice
Instructions:

Prep the salad:
In a large bowl, combine lettuce, chicken, mango, bell pepper, red onion, jicama, carrots, toasted cashews, and sesame seeds. -
Make the dressing:
In a small bowl or jar, whisk or shake together the Spicy Pineapple Peanut Sauce, orange juice, rice wine vinegar, and lime juice until smooth. -
Toss and serve:
Pour dressing over salad and toss thoroughly to coat. Serve immediately, or let sit 5–10 minutes to soak in the flavor.
