Hamachi Crudo with Passion Fruit Habanero Sauce

Ingredients

For the Crudo:

  • 8 oz hamachi (yellowtail), sashimi-grade, thinly sliced
  • 2 radishes, thinly sliced
  • 1 orange, segmented
  • 1 shallot, finely sliced
  • Chili oil, to taste
  • Sea salt, to taste

For the Passion Fruit Habanero Sauce:

  • 1/2 can Passion Sun Hawaiian Sun soda (or 6 oz passion fruit soda)
  • 2 tbsp rice wine vinegar
  • 1 habanero pepper, finely chopped (adjust to taste)
  • 2 tbsp passion fruit sweet chili sauce
  • 1 tsp sesame oil
  • 1 shallot, finely minced

Instructions

  1. Prepare the Sauce:

    • In a small saucepan, combine the half can of passion fruit soda and rice wine vinegar. Bring to a simmer over medium heat and let it reduce by half, about 5-7 minutes.
    • Remove from heat and stir in the minced habanero, passion fruit sweet chili sauce, sesame oil, and minced shallot. Adjust seasoning if needed. Let it cool.
  2. Prepare the Crudo:

    • Arrange the thinly sliced hamachi on a large plate or platter.
    • Scatter the sliced radishes and orange segments over the hamachi.
    • Add the sliced shallots on top.
  3. Drizzle and Season:

    • Drizzle the chili oil over the hamachi and garnish with sea salt to taste.
    • Spoon the cooled passion fruit habanero sauce over the dish.
  4. Serve:

    • Serve immediately with additional chili oil on the side for those who enjoy more heat.
