Airfryer Popcorn Shrimp Tacos W/ Mango Salsa and Passion Fruit Sweet Chili Aioli

1. Prepare the Mango Salsa:

  • In a bowl, combine the diced mango, red bell pepper, shallot, cilantro, and jalapeño.
  • In a small bowl, whisk together the rice wine vinegar, agave syrup, lime juice, and a pinch of salt.
  • Pour the dressing over the mango mixture and toss gently to combine. Set aside to let the flavors meld.

2. Make the Passion Fruit Aioli:

  • In a separate bowl, mix the mayonnaise, Passion Fruit Sweet Chili Sauce, roasted garlic, rice wine vinegar, salt, pepper, and agave syrup (if using).
  • Stir until smooth and well combined. Adjust seasoning to taste. Refrigerate until ready to use.

3. Cook the Popcorn Shrimp:

  • Preheat your air fryer to 400°F (200°C).
  • Place the frozen popcorn shrimp in the air fryer basket in a single layer (you may need to cook in batches depending on your air fryer size).
  • Cook for about 8-10 minutes, shaking the basket halfway through, until the shrimp are golden and crispy.

4. Assemble the Tacos:

  • Warm your favorite tortillas (corn or flour work great!).
  • Place a generous portion of crispy popcorn shrimp on each tortilla.
  • Top with a spoonful of mango salsa and drizzle with Passion Fruit Aioli.
