Vegan Spicy Pineapple Peanut Noodle Salad
Ingredients:
For the Salad:
- 8 oz rice noodles
- 1 cup cucumbers, thinly sliced
- 1 jalapeño, thinly sliced (adjust for spice level)
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup shredded carrots
- 2 cups purple cabbage, shredded
- 1 cup kung wow marinated tofu, cubed
- 1/4 cup crushed peanuts
- Lime wedges for serving
For the Spicy Pineapple Peanut Sauce:
- 1/2 cup spicy pineapple peanut sauce (store-bought or homemade)
Instructions:

Prepare the Rice Noodles:
- Option 1: Boil water in a large pot, add the rice noodles, and cook according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
- Option 2: Place the rice noodles in a heatproof bowl and cover them with hot water. Let them soak for about 10-15 minutes, or until tender. Drain and set aside.

Combine the Salad Ingredients:
- In a large mixing bowl, combine the cooked or soaked rice noodles, cucumbers, jalapeños, red and yellow bell peppers, shredded carrots, purple cabbage, and kung wow marinated tofu.

Dress the Salad:
- Pour the spicy pineapple peanut sauce over the salad mixture. Toss gently to combine, ensuring all ingredients are well-coated.

Serve:
- Transfer the salad to a serving bowl or plate. Top with crushed peanuts and lime wedges for extra zest.

- Serve immediately or chill in the refrigerator for 30 minutes to enhance the flavors.
