Vegan Spicy Pineapple Peanut Noodle Salad

Ingredients:

For the Salad:

  • 8 oz rice noodles
  • 1 cup cucumbers, thinly sliced
  • 1 jalapeño, thinly sliced (adjust for spice level)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 2 cups purple cabbage, shredded
  • 1 cup kung wow marinated tofu, cubed
  • 1/4 cup crushed peanuts
  • Lime wedges for serving

For the Spicy Pineapple Peanut Sauce:

  • 1/2 cup spicy pineapple peanut sauce (store-bought or homemade)

Instructions:

  1. Prepare the Rice Noodles:

    • Option 1: Boil water in a large pot, add the rice noodles, and cook according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
    • Option 2: Place the rice noodles in a heatproof bowl and cover them with hot water. Let them soak for about 10-15 minutes, or until tender. Drain and set aside.
  2. Combine the Salad Ingredients:

    • In a large mixing bowl, combine the cooked or soaked rice noodles, cucumbers, jalapeños, red and yellow bell peppers, shredded carrots, purple cabbage, and kung wow marinated tofu.
  3. Dress the Salad:

    • Pour the spicy pineapple peanut sauce over the salad mixture. Toss gently to combine, ensuring all ingredients are well-coated.
  4. Serve:

    • Transfer the salad to a serving bowl or plate. Top with crushed peanuts and lime wedges for extra zest.
  5. Enjoy:

    • Serve immediately or chill in the refrigerator for 30 minutes to enhance the flavors.
