Whipped Feta Dip with Green Curry Chimichurri Drizzle

This creamy, tangy, and herbaceous whipped feta dip is the perfect appetizer or snack. The Green Curry Chimichurri drizzle adds a bold, citrusy punch that takes this dip to the next level. Serve with warm pita, crackers, or fresh veggies for an easy, crowd-pleasing dish!

Ingredients:

  • 8 oz feta cheese (block, not crumbled)
  • ½ cup Greek yogurt (or sour cream)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 small garlic clove, minced
  • ½ tsp black pepper
  • ¼ tsp salt (optional, depending on the saltiness of the feta)
  • ¼ cup Green Curry Chimichurri (for drizzling)
  • 1 tbsp chopped fresh cilantro or basil (for garnish)
  • 1 tbsp toasted pine nuts or sesame seeds (optional, for crunch)

Instructions:

  1. Blend the dip: In a food processor, combine feta, Greek yogurt, olive oil, lemon juice, garlic, black pepper, and salt (if needed). Blend until smooth and creamy.
  2. Plate the dip: Spread the whipped feta onto a plate or shallow bowl, creating swirls with the back of a spoon.
  3. Drizzle with Green Curry Chimichurri: Spoon Green Curry Chimichurri over the top, letting it naturally spread into the ridges of the dip.
  4. Garnish: Sprinkle with fresh herbs and toasted pine nuts or sesame seeds for extra flavor and texture.
  5. Serve immediately with warm pita, crackers, or sliced fresh veggies.
