Green Curry Chimichurri Mango Salsa
This bright, fresh, and zesty salad is packed with tropical flavors, a little heat, and the perfect balance of acidity and herbs. It’s great as a side dish, topping for tacos, or even enjoyed on its own!
Ingredients:
- 1 ripe mango, diced
- 1 red bell pepper, diced
- 1 jalapeño, finely chopped (remove seeds for less heat)
- 2 Roma tomatoes, diced
- ¼ cup red onion, finely diced
- ¼ cup fresh cilantro, chopped
- ¼ cup Green Curry Chimichurri
- Juice of 1 lime
- Salt & black pepper to taste
Instructions:
- In a large bowl, combine diced mango, red bell pepper, jalapeño, Roma tomatoes, red onion, and cilantro.
- Drizzle with Green Curry Chimichurri and fresh lime juice.
- Season with salt and black pepper to taste.
- Toss gently to combine and let sit for 10 minutes to allow the flavors to meld.
