Green Curry Chimichurri Mango Salsa

This bright, fresh, and zesty salad is packed with tropical flavors, a little heat, and the perfect balance of acidity and herbs. It’s great as a side dish, topping for tacos, or even enjoyed on its own!

Ingredients:

  • 1 ripe mango, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, finely chopped (remove seeds for less heat)
  • 2 Roma tomatoes, diced
  • ¼ cup red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • ¼ cup Green Curry Chimichurri
  • Juice of 1 lime
  • Salt & black pepper to taste

Instructions:

  1. In a large bowl, combine diced mango, red bell pepper, jalapeño, Roma tomatoes, red onion, and cilantro.
  2. Drizzle with Green Curry Chimichurri and fresh lime juice.
  3. Season with salt and black pepper to taste.
  4. Toss gently to combine and let sit for 10 minutes to allow the flavors to meld.
  5. Enjoy!
