Green Curry Chimichurri Mediterranean Pasta Salad

Ingredients:

  • 12 oz pasta (rotini, bowtie, or penne work best)
  • ½ cup Green Curry Chimichurri
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, sliced
  • 1 cup cucumber, diced
  • ½ small red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh herbs (parsley, basil, or cilantro) whichever you choose!
  • 1 tbsp lemon juice
  • Salt & black pepper to taste

Instructions:

  1. Cook pasta according to package instructions until al dente. Drain and rinse with cold water to cool.
  2. In a large bowl, toss the cooled pasta with Green Curry Chimichurri, olive oil, and lemon juice.
  3. Add cherry tomatoes, olives, cucumber, red onion, and feta. Toss until well combined.
  4. Season with salt and black pepper to taste.
  5. Garnish with fresh herbs and let the salad chill in the fridge for 30 minutes before serving for the best flavor.

This pasta salad is bright, tangy, herby, and absolutely delicious—great for BBQs, picnics, or as a flavorful meal on its own. Enjoy!
